A ruby red wine with an intense bouquet that evoques the smell of freshly cut grass with hints of sweet green peppers and spices. It has a well balanced taste with strong tannins. It pairs very well with main meat dishes, pasta dishes and with cheese.
Vinification: The grapes are harvested the second week of September and the first of October. After destemming the grapes undergo red vinification and are left to macerate for a relatively long time with frequent pumping over in order to extract the colour and the varietal characteristic smells. Once drawing off is finished the fermentation is completed. This is followed by various rackings. The wine is then left to mature for a few months in steel vats.
Grape Varieties: Cabernet Sauvignon - Cabernet Franc.
Alcohol Content: 13% vol.
